Country sourdough
Naturally leavened, one loaf at a time.
Portland, Maine
Naturally leavened loaves, baguettes, croissants, cinnamon buns and seasonal fruit galettes come out of the wood-fired oven Wednesday to Sunday.
Our bakery
Dough is mixed in the afternoon and left to rise overnight. In the morning it is shaped by hand, loaded into the wood-fired oven on a peel, and pulled out when the crust sounds hollow. That is the whole method.
There are five of us in the bakehouse and we bake what we can sell in a day. It is why the shelves thin out by noon, and why nothing here sits over until tomorrow.
It is up to temperature by five, so the first loaves leave it at half past six.
No commercial yeast. The lift comes from a starter we feed twice a day.
Wheat from New England mills, and fruit for the galettes from farms along the coast.
In season
Peaches in August, apples and pears from October. Each one is folded by hand around whatever came in that week, and we make a small batch, so they are usually gone by noon.

Kind words
The sourdough has a crust you can hear from the next room, and the crumb is still soft on Thursday.
I come in on Saturday for the cinnamon buns. Get there before eight if you want one.
The autumn galettes are the reason I plan my Saturday morning around the market.
